Green Genius Hits the Streets with a Plant-Powered Food Truck in Newark, NJ

As summer winds down and the city begins to exhale, Chef Tori Funn—a U.S. Army veteran and the visionary behind the plant-based culinary lifestyle brand Green Genius—today announced the ofKicial launch of the Green Genius Food Truck, located in Newark, NJ.

This one-of-a-kind, Black woman-owned destination is poised to redeKine the mobile food experience with indulgent, nutrient-dense, diabetic-friendly, dairy-free meals and desserts, featuring innovative and decadent specialty Klavors—guilt-free. From jerked oyster mushrooms and sweet plantain wafKles to shawarma wraps, cashew scallops, and hibiscus coolers, every dish reKlects a carefully curated harmony of cultural traditions and healing intentions—bold, Klavorful, and soy-free. Whether you’re chasing one last summer bite or setting the tone for the body you’ll build this winter, Green Genius is here to nourish Newark and beyond with food that honors both the palate and the purpose.

Before launching the Green Genius Food Truck, Chef Tori was a driving force in positioning Newark, NJ as a premier destination for health-conscious locals and visitors alike. In June 2023, she joined Good Company Café as Executive Chef and Menu Architect, where she crafted a menu centered on plant-based, nutrient-rich dishes that reKlected the café ’s mission to provide wholesome, Klavor-packed offerings. Her culinary leadership helped solidify the café ’s reputation as a hub for mindful dining in the heart of Newark.

Prior to Good Company Café , Chef Tori honed her skills under the guidance of Celebrity Chef Ameer Natson, serving as an intern and contributing to the execution of high-proKile culinary events. This formative experience offered her a front-row seat to the world of elite hospitality and further fueled her passion for creating memorable, elevated dining experiences.

Chef Tori graduated Summa Cum Laude with an Associate Degree in Culinary Arts with specializations in Menu and Facility Design and Food and Wine Pairing from Hudson County Community College. She also earned her Associate of Applied Science in Integrative Health Sciences with a specialization in Holistic Health Practice (Institutional Honors), and holds certiKications as a herbalist and aromatherapist. She is currently completing her Bachelor of Science in Holistic Nutrition with an emphasis on food psychology, which she will earn in June 2026 from the American College of Healthcare Sciences.
